Before You Start

Four things that make any pasta better

Salt it properly

One tablespoon of salt per litre, and the water should taste distinctly of the sea. Under-salted pasta tastes flat no matter how good the sauce is.

Keep a mug of the water

The starch left in the pot is what emulsifies sauce into something that coats instead of pools. Never drain all of it away.

Finish in the pan

Toss pasta and sauce together over heat for the last two minutes. Plated separately, the pasta cools and the sauce slides off.

Undercook by one minute

Pasta carries on cooking in the sauce. Pull it a minute early and it will land exactly right on the plate.
